Opens this weekend at Fort Pond in Montauk, with Top Chef, season two competitor Sam Talbot as executive chef. The indoor/outdoor restaurant menu ranges from high-end fish sticks and lobster rolls to crab ceviche and coffee-rubbed filet mignon. Yes, there's a burger, too.

The new steak-plus house at the Southampton Inn. The hotel has been around for decades, but OSO is its first full-service restaurant. Chef Peter Dunlop's resumé includes Cafe des Artistes in Manhattan.

Kicks off the season with American fare at the Sole East Hotel in Montauk, which used to be the Shepherd's Neck Inn. 90 Second House Rd., 631-668-2105. Alison, the New American restaurant, has relocated from School Street in Bridgehampton to the Maidstone Arms at 207 Main St., East Hampton.

A September opening is expected for the successor to Gordon's, the Amagansett landmark. The new restaurant, to be opened by the proprietors of The Meeting House restaurant in Amagansett, will feature Italian cuisine, and keep the Gordon's name.
